we enjoy eating the food that we grew up with in Puerto Rico, our small caribbean island with a huge flavor profile. We find joy in coming together and whipping up some delicious dishes like mofongo (mashed plantains), pernil (roasted pork), arroz con gandules (rice and pigeon peas), and something sweet such as flan or tres leches. Sometimes we cook our grandmother’s recipes, and other times from traditional Puerto Rican cookbooks. Most of the time, however, we are thinking of new recipes by bringing our authentic dishes and combining them with the southern food we have come to know and love in North Carolina.

Taqueria El Azteca was founded in October, 2000. Originally located on Spring Garden St., in August, 2007 we relocated to Quaker Village Shopping Center across from Guilford College. Our continued success is based upon our 10 year old formula: tacos made with handmade tortillas served with fresh vegetables and a smile. Unlike our larger competitors, we prepare our food on a much smaller scale. Our goal is quality mexican food, not mass-production.

I can remember the sizzle of the wok pan as the savory sauce was poured into it, the feel of the heat of the stove, the first taste of the hot food before it was ready to be sold to the hungry crowd, and the smiles of satisfied customers. Those were my fondest memories of my childhood -- surrounded by the delicious dishes my mother used to make under a pop-up tent in various county fairs and festivals. It instilled in me a passion in catering and has never ceased to motivate me to recreate the same amazing Thai and Laotian food that I was brought up with.

One day Suzie sat down with her mother Glenda Keenan, with whom she co-owns Blue Sky Oil & Vinegar, to come up with a cookbook that offers innovative possibilities for preparing foods with Ultra Premium olive oil and balsamic vinegars. Their brainstorming led Suzie to the idea of creating a full menu for a food truck and restaurant. In 2014, the Olio & Aceto food truck began serving up gourmet sandwiches and fried bites, and six months later, the Olio & Aceto Cafe opened its doors in Chapel Hill.

Stephanie Ruggiro, the owner of STUFT, is a college Graduate from The University of North Carolina Wilmington. After following her dreams of moving to New York to pursue a job in Advertising,, she realized after just a year of being there that a 9-5 desk job wasn't for her.
After moving back to North Carolina, she started doing research on food trucks in the Raleigh/Durham area,. Baked potatoes however weren't just a random idea she thought of. When Stephanie's parents were first married, they had a baked potato business of their own in a Flea Market in New York.
With the help of her parents, Stephanie was able to purchase a truck and have it outfitted to exactly what she needed.
